For this recipe, I used baby back ribs, with a dry rub, before mixing them well with barbecue sauce.

What Type of Ribs did I use for this Recipe?

For this recipe, I used the baby back ribs. The spare ribs are also another type of ribs you could use, although it takes a few more minutes to get tendered than the baby back ribs.

  • For a baby back rib, it gets done in 30 minutes.
  • For sparerib, it gets done in 35 minutes.

Removing Membrane from Ribs

Before cooking, you should remove the membrane from your meat. Some shops would have done that before selling them, while some do not do this.

Removing the membrane from your rib is not a difficult task. You can get it done in 1 or 2 minutes. How do you go about this?

  • Turn the ribs to make the meaty part face down.
  • Remove the membrane by sliding your finger or butter knife under the membrane (just yank it off – no special skills required).

Ingredients

For the ribs

  • 1 rack baby back ribs
  • ¼ cup apple cider vinegar
  • 1 ½ cup apple juice

For the spice rub

  • 1 tbsp chili powder
  • ¼ cup brown sugar
  • 1 teaspoon ground cumin
  • 1 tbsp onion powder
  • ¼ teaspoon ground cayenne pepper
  • 1 tbsp paprika
  • 2 teaspoon salt
  • 1 tbsp garlic powder
  • 1 teaspoon ground black pepper

For the BBQ Sauce

  • 1 tbsp Worcestershire sauce
  • ½ cup barbecue sauce (bought from the store)
  • 1 teaspoon hot sauce
  • ¼ cup ketchup
  • ¼ cup maple syrup

Instructions

  • Mix the spice ingredients in a small bowl.
  • Dry the ribs with paper towels after rinsing.
  • Remove the membrane from the ribs.
  • Season the baby back ribs well with the dry rub. Do this for both sides of the rib.
  • Place the pressure cooker rack or the instant pot trivet in the bottom of the pressure cooker/instant pot.
  • Pour the apple cider vinegar and the juice.
  • Put the ribs inside the pot. Ensure it is standing around the pot.
  • Shut the lid of the pressure cooker and cook on HIGH for 25 minutes.
  • While cooking the ribs, you should prepare the BBQ sauce by placing all the ingredients in a small saucepan and stirring to mix well. Simmer on low heat for about 20 minutes on a stovetop, while stirring it from time to time.
  • After that, let the instant pot release naturally for about 5 minutes, and then open the valve to release the remaining pressure.
  • Now, remove ¼ of the cooking liquid in the instant pot and add to the BBQ sauce. Cook and repeatedly stir for about 5 minutes.
  • Now, place the ribs on an aluminum foil sheet, brush the ribs with the BBQ sauce on both sides and place under the instant pot broiler for another 5 minutes.
  • Serve with the BBQ sauce you have remaining.

Notes

For me, I prefer broiling the ribs. You can as well just spread BBQ sauce on the ribs and serve if you don’t like broiling.
